The story / A practical approach

Roast for warmth.
Finish with brightness.

The sweetness of roasted carrots and the earthiness of lentils make a natural pairing. A squeeze of lemon changes the mood entirely, keeping the bowl lively and giving the cumin-scented vegetables a cleaner finish.

There are two simple preparations here: simmer lentils until tender but still intact, and roast evenly cut carrots until their edges deepen in colour. While those cook, chop a little red onion and parsley; the lemon and olive oil become a quick dressing.

This is an editorial adaptation informed by established lentil-and-roasted-carrot salad recipes. Quantities are aligned with the Personal Chef OS import pilot, but the exact combination has not been kitchen-tested by The Recipe Journal. See the source notes below for independently published versions.

“The trick is contrast: sweet edges, tender lentils, a sharp finish.”

At the counter / Preparation

How to make it.

  1. 01
    Cook the lentils
Cook 240 g dried green or brown lentils according to package directions until tender but holding their shape. Drain thoroughly and cool promptly using food-safe procedures.
  2. 02
    Roast the carrots
Heat the oven to 200°C / 400°F. Toss 400 g carrot wedges with 1 tbsp olive oil, 1 tsp ground cumin and ¼ tsp black pepper. Arrange in a single layer and roast for approximately 25–35 minutes, turning once, until tender and browned at the edges.
  3. 03
    Prepare the fresh elements
Finely dice 40 g red onion and chop 15 g fresh parsley. Juice one lemon; keep any zest if you want a more fragrant finish.
  4. 04
    Dress and assemble
Combine cooked lentils, roasted carrots, onion and parsley. Add the remaining 1 tbsp olive oil and lemon juice gradually, then gently toss and taste. Adjust seasoning to taste; salt is not included among the eight structured pilot ingredients.
  5. 05
    Portion and chill
Serve warm if handled safely, or cool cooked ingredients promptly before dividing into four clean containers. Refrigerate at 4°C / 40°F or colder and follow applicable service and transport rules.
Kitchen notes / Make-ahead guidance

Lentil texture: Choose green or brown lentils that hold their shape when cooked; red split lentils generally soften too much for this bowl. Cooking times vary by variety and package.

Make ahead: Roast carrots and prepare lentils ahead, following safe cooling practices. For fresher herbs and a brighter flavour, add parsley and lemon close to serving where practical.

Storage & service: Cool cooked foods promptly and refrigerate at 4°C / 40°F or colder. Professional holding, transport and maximum shelf life require appropriate procedures and local food-service guidance; this exact recipe has not undergone a shelf-life test.

Allergens and dietary needs: Review ingredient packaging, preparation surfaces and client-specific declarations. If adding optional toppings, assess them separately.
